Scrape off any old caulk, adhesive or sealant with a putty knife. Place the oak saddle on a miter saw. Cut a 1-inch sample piece off the end of the threshold. Place the sample piece on the floor and butt it into the sides of the door jambs as if the new oak saddle already was installed.
Trace a pencil line on the door jamb along the top edge of the saddle. This is to transfer the thickness and angled line of the oak saddle if it has one to the door stop on the door jamb. Do both sides; this is so you can cut off the door stop without removing it from the door jamb.
Cut off the door stop using a coping saw. Cut along the line you traced on the door jamb with the pencil. Cut off both sides. Use an old chisel or screwdriver to pry out the splines that hold the gasket in place if there are splines , and then pry up the gasket and pull it out of its groove. Take the old gasket to a home improvement center or hardware store and buy an exact replacement.
